Egg Salad Sandwiches

8 hard-cooked eggs, peeled and coarsely chopped
2/3 cup mayonnaise
3 Tablespoons sweet pickle reliah
1/4 cup finely diced green onion greens
1/2 Tablespoon minced green onion whites
1 teaspoon freshly ground pepper
Salt, to taste (optional)
Watercress, optional
12 pieces of thin bread

  1. To hardboil eggs, place eggs in pot, single layer, and cover in cold water, an inch or two above the eggs. Bring to a rolling boil over medium-high heat, then turn off heat and cover. Do not remove from heat. Let sit for 10-13 minutes. Once cooked, drain and rinse with cold water.
  2. Shell egg and coarsely chop. 
  3. In a bowl, mix all ingredients except egg, salt (optional) and watercress (optional). Add egg and gently mix. Add salt to taste (optional).
  4. Spread a thin layer of unsalted butter onto bread, then share egg mixture among sandwiches. Add cress, if desired.
  5. Cut and serve.

Makes 6 sandwiches.
