Eggplant and three cheese calzone


1 recipe pizza dough (or store bought pizza dough)
Olive oil
1 medium eggplant (about 3/4 lb.), sliced 1/4 to 1/2 inch thick
Kosher salt
1 cup ricotta
1 cup grated mozzarella
1/3 cup freshly grated Parmesan
Pinch of dried oregano
1 egg
Fresh basil, for garnish

Quick sauce
1 cup strained tomatoes
1/4 teaspoon table salt
1 garlic clove, minced
Red pepper flakes
Pinch of sugar
Few drops of red wine vinegar
