2-4 Fennel Bulbs
1 small white onion
1 cup heavy cream (or milk)
2-4 tbsp. butter cut into small pieces
2 tbsp. thyme leaves, divded
salt & pepper
1 1/2 cups coarse breadcrumbs
1/2 cup chopped walnuts
2 tbsp. olive oil
1/2 cup parmesan cheese
