Feta cheese foam with red wine reduction

This savory treat is based on Rick Tramonto blue cheese foam found in his "amuse-bouche" book.


1/2 cup red wine (sweet is better)
1 cup cream
8 oz feta cheese (crumbled)
1 apple, crispy
1 Tablespoon dry roasted almonds
Salt and white pepper to taste


  1.  Simmer wine until reduced to 1/3.  Cool and refrigerate.
  2.  Skald cream.  When it begins to boil, remove from heat, add cheese and stir until all the cheese is melted.  Season to taste.
  3. Pour cheese/cream through a very fine mesh into an iSi cream whipper and charge.  Chill for at least 4 hours in the refrigerator.
  4. Crumble almonds in a mortar and pestle.
  5. To plate, dispense foam into a small dish or bowl, spoon a teaspoon of wine around the foam.  Sprinkle a pinch of almonds on foam.  Add a thin slice of apple.


Makes more than a dozen servings.

Preparation Time:  30 minutes of prep time done about 4-8 hours ahead of serving.
