French Pork and White Bean Casserole

1 lb dried cannellini beans (about 2 c), rinsed and picked over
2 medium celery ribs
1 bay leaf
4 sprigs fresh thyme
1 1/2 lbs fresh French garlic sausage (see note)
4 oz salt pork, rinsed of excess salt
4 T vegetable oil
1 1/2 lbs pork shoulder, cut into 1" chunks
1 large onion, chopped fine (about 1 1/2 c)
2 medium carrots, peeled and cut into 1/4" dice (about 1 c)
4 cloves garlic, minced
1 T tomato paste
1/2 c dry white wine
1 (14.5 oz) can diced tomatoes
4 c chicken broth
4 large slices high quality white sandwich bread, torn into rough pieces
1/2 c chopped fresh parsley
