Fresh Corn Chowder

Notes: 

This soup calls for a quart of 1/2 and 1/2. Feel free to use all whole milk and add some butter.

Ingredients: 

3 Tablespoons unsalted butter
1 yellow onion chopped
1 large carrot chopped
1 stalk of celery chopped

1 quart of chicken broth
6 ears of corn, kernels removed and reserved, cobs cut in half and reserved
1 bay leaf
1/4 teas. thyme

3 med. Yukon gold potatoes, peeled and diced
1/2 red pepper chopped

1 quart half and half *

Salt and Pepper to taste
