Ingredients: 

¼ cabbage (e.g. red, green, savoy), finely sliced or shredded

2 carrots, coarsely grated

1 beetroot, coarsely grated

1 capsicum, cored, finely sliced

½ head broccoli, finely chopped

¼ cauliflower, roughly grated or finely chopped

1 spring onion, finely sliced

A handful of chopped parsley (optional, if you have it)

HONEY MUSTARD DRESSING

3 tablespoons extra-virgin olive oil

3 tablespoons vinegar (e.g. red wine or apple cider)

1 good tablespoon runny honey

1 good teaspoon wholegrain mustard
