Fried rice with color

Left over rice (enough for 2 to 3 servings) if more rice then adjust the ingredients below accordingly.
1 Red bell pepper - fine diced
1 green bell pepper - fine diced and or chopped asparagus 4 to 5 spears
1 green zucchini - fine diced
1 English cucumber (or whatever cucumber is available) - fine diced
1 green chili - fine diced
1 tsp ginger paste
1 tsp garlic paste
1/2 tsp turmeric.
1/4 tsp black pepper
1/2 tsp Salt or to taste
2 to 3 tbsp olive oil
Coriander leaves rough chop - optional.

Add oil to pan. Low heat. Try to use a larger flat type e.g sautée pan. Add ginger and garlic paste. Cook for about 3 to 5 minutes. Increase heat to medium high. Add the rest of the ingredients except rice. Cook for about 7 to 8 minutes; less if you like the veggies slightly crunchy. Add the rice while breaking with your fingers any lumps. Gently fold the veggies and rice. Cook for about 5 to 6 minutes or till rice is nice and hot using folding method to mix the rice. Be careful not to break the rice. Serve and garnish with rough chop coriander leaves.
