Gimme Some Tofu Skin

8 ounces (4 60-gram packets) fresh tofu skin (aka yuba)

1½ teaspoons sugar

1 tablespoon sake

2 tablespoons light (regular) soy sauce

1 tablespoon unseasoned Japanese rice vinegar

1 teaspoon sesame oil

1 to 1½ tablespoons chili oil (see below) with or without chili flakes

4½ teaspoons canola oil

¼ cup julienned carrot

¼ cup julienned red pepper

4 whole large leaves napa cabbage thinly sliced into noodle-like strips

¼ teaspoon salt

3 tablespoons thinly sliced green onion, green part only
