Ginger Ale

Ingredients: 

1 gal + 1 two liter
2 pieces of ginger
7 T lemon juice
2-3/4 cup sugar


  1. Dice up ginger.
  2. Heat on stove top ginger, sugar and 2-1/4 c. water or use garlic press to get ginger juice.
  3. Let syrup mixture cool to room temp and add 1/2-3/4 tsp yeast in water and let sit for 5 min.
  4. Combine syrup, yeast solution, and cold water to fill bottle and add lemon juice (w/o preservatives). 
  5. Let sit and fermet for 24-30 hours.
  6. Refrigerate to stop reaction.

Did not turn out the best. More sugar and longer boiling needed. Use squeezed lemon not bottled lemon juice
