Ginger Basmati Rice

3/4 cup = 5 ww pointsplus


1 cup uncooked basmati rice
1 1/4 c chicken stock
1/3 c lite coconut milk
1/2 teas salt
1 3-inch piece of ginger, sliced lengthwise in 4 pieces
1/4 c chopped cilantro

  1. Combine stock, coconut milk, salt and ginger in medium saucepan and bring to boil
  2. add rice, reduce to a simmer and cook for 20 minutes or until rice is tender.
  3. Fluff with a fork and add cilantro.
