3 cups unbleached all-purpose flour, plus an additional 1/2 cup or so to have on hand for rolling out the dough
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 cup (1 stick) unsalted butter, softened
1/2 cup dark brown sugar
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1/2 teaspoon ground cloves
3/4 teaspoon kosher salt
1 large egg
1/2 cup unsulfured molasses
