Gingerbread

Ingredients: 

155 g butter
140 ml syrup
160 ml brown sugar
450 ml self raising flour
2 eggs
125 ml water
5 ml grated lemon zest
10 ml powered ginger
Illovo preserved ginger


  1. Melt butter with sugar, syrup and water.
  2. Sieve flour and powdered ginger.
  3. Pour melted ingredients onto dry ingredients.
  4. Beat until thoroughly mixed.
  5. Add lemon zest and eggs, beat.
  6. Pour into baking tray.
  7. Bake at 180ºC for 60 minutes.
  8. Cool, ice and add preserved ginger or serve with cream or icecream.
