Gingerbread Ice Cream


1 1/2 cups heavy cream
1 1/2 cups whole milk (I used 1%)
One 3-4 inch piece fresh ginger, peeled and roughly chopped
6 large egg yolks
1/2 cup packed light brown sugar
1/4 cup molasses
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon salt
2 teaspoons vanilla extract
