Makes about 75 cookies

Ingredients: 

1 cup sugar
3/4 cup unsalted butter, softened
1 egg
1/3 cup molasses
2 1/4 cup all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground ginger (double if you like extra gingery cookies!)
1 teaspoon cinnamon
1/2 teaspoon cloves
1/4 teaspoon nutmeg
1/2 cup crystallized ginger (optional)
cinnamon-sugar for rolling - 1/4 cup sugar mixed with 1 teaspoon cinnamon
