4 strips 1/8” diced sliced bacon
6 TBL. butter
1 ½ cups Diced 1/4” to 3/8” yellow onion
1 ½ cups Diced 1/4” to 3/8” celery
4 cloves Peeled Garlic (add more if you like) crushed and chopped fine
1 cup Diced 1/4” red bell pepper
1 cup Cut corn (yellow) Frozen or Fresh
1 cup flour
1 pinch Crushed Red Pepper (less or more based on your preference)
2 oz. Dry Sherry
24 oz. Clam juice
32 oz. Heavy Cream
48 oz. Whole Milk
1 pinch Dried thyme
1 pinch Dried dill weed
1/3 cup Diced 1/4” Fresh fennel
¼ cup Chopped parsley
6 oz. Smoked Alaskan Salmon (flaked pieces)
8 oz. White Fish (cod, rockfish, pollock or halibut) Cut into ½ pieces
4 cup ½” Diced red potatoes
1 pinch Ground Black Table Pepper (medium grind)
¼ tsp. OLD BAY Seasoning
½ lemon Lemon Juice
