2 eggs
1 cup panko breadcrumbs
1 cup hearty white bread torn into small pieces
3 TBSP whole milk
1 tsp fresh thyme leaves
1 tsp Dijon mustard
5 ounces sharp cheddar cheese finely shredded
1/4 cup cooking oil
