Gluten-free Banana Bread

Ingredients: 

1 15 oz can of chickpeas, drained and rinsed
2 very ripe bananas
1/2 cup oats
4 eggs
1/3 cup stevia
1/3 cup sugar
3 tablespoons peanut or almond butter (natural salted)
1/4 teaspoon salt
1/3 - 1/2 cup almond milk
1/2 teaspoon vanilla extract
1 teaspoon baking powder
1/2 cup chopped walnuts (optional)


  1. Preheat oven to 350 degrees. 
  2. Grease loaf pan.
  3. Put chickpeas, bananas, and oats in food processor and process until smooth.
  4. Add eggs, stevia, sugar, peanut butter, and salt into food processor and process until smooth.
  5. Stir in almond milk, baking powder, and walnuts until incorporated. 
  6. Pour into prepared pan and bake for 60 minutes or until toothpick inserted comes out clean. Allow to cool before removing from pan.
