Gluten Free Caramel Apple Cheesecake Bars

Ingredients: 

Crust and Topping:
1/2 cup (110 g) brown sugar, packed
2/3 cup unsalted butter, softened
1 1/2 cups (150 g) Only Oats Pure Whole Grain Quick Cook Oats (gluten-free quick cook oats)
1/2 cup (50 g) Only Oats Pure Whole Grain Oat Flour (gluten-free oat flour)
1/2 cup (60 g) tapioca starch
2/3 cup (90 g) chopped pecans
1 teaspoon (5 g) baking soda
1/2 teaspoon (2.5 g) ground cinnamon

Cheesecake Filling:
8 oz (250 g) cream cheese, softened
1/4 cup (50 g) granulated sugar
1 large egg, room temperature
1 teaspoon (5 ml) vanilla extract

Apple Layer:
2 Granny Smith apples, peeled, cored, chopped
1/4 cup (50 g) granulated sugar
1/2 teaspoon (.75 g) ground cinnamon
1/4 teaspoon (.75 g) ground nutmeg

1/2 cup caramel topping/sauce
