Gluten Free Chinese-Style Chicken Balls with Sweet and Sour Sauce

Notes: 

I only used 1lb of chicken
added some onion rings and also separated out some batter to do apple rings for dessert

Ingredients: 

1/2 cup ketchup
1/2 teaspoon gluten-free soy sauce
1/3 cup white vinegar (for a sweeter sauce reduce to 1/4 cup)
3/4 cup water
1 1/4 cups white sugar
1/2 cup brown sugar, packed
3 tablespoons cornstarch
1/4 cup cold water
1 /2 cup brown rice flour
1/3 cup potato starch
1/4 cup tapioca starch
1 cup cornstarch
1 tsp baking powder
1 tsp baking soda
1 tsp sugar
1 1/3 cups cold water
oil (for frying)
2 lbs boneless chicken breasts, cut into chunks (you should get about 3-4 dozen pieces)
seasoning salt (optional)
