Gluten Free Macaroni & Cheese

Notes: 

GF Pasta Noodles: There is a wide assortment of GF pasta noodles available these days. The elbow macaroni noodle is pretty standard in macaroni and cheese, but I love making this recipe using Bionaturae Rigatoni Gluten Free Pasta. They are big noodles that hold the cheese sauce perfectly and result in a crisp casserole dish. Bionaturae pasta is easy to find at the grocery store and it is made in a GF facility and regularly tested.

Ingredients: 

2 cups GF pasta (see note below on GF pasta)
3 Tablespoons butter
2 Tablespoons GF flour (any GF flour blend will work – I have even made it with GF Pancake mix)
½ teaspoon salt
Dash of pepper
2 cups milk
¼ cup finely chopped onion (optional)
8 ounces sharp cheddar cheese cubed (makes 2 cups cubed)
A handful of crunched up GF potato chips (optional)
