Gluten-Free Peanut Butter Cookies

Notes: 

Best with cashew butter, almond butter also works. Raisins, oats, etc. can be added. Flaxseed or other egg sub used with success. A little less sugar is better.

Ingredients: 

1 large egg (1 tbs flax to 3 tbs water sub)
3/4 cup sugar
1 teaspoon baking soda
1 cup creamy unsweetened peanut butter
1/2 teaspoon gluten-free vanilla extract
1/3 cup chocolate chips (optional)
