Gluten Free Shortbread Crust with fruit fillg

Notes: 

This is enough for an 8 " pan, nice bottom crust with a crumble topping. Second time making this I made adjustments as in OR directions

Ingredients: 

2 2/3 cups almond flour or 2 cups almond meal, 1 cup Artesian GF
8 Tablespoons sugar
1/4 cup cornstarch OR delete
1/4 teaspoon salt
8 Tablespoons cold butter, cut into small pieces

Peaches: about 2 lbs, skinned, sliced
Sugar: about 1 cup or to taste
Lemon juice: 1/2 or 1 whole lemon juiced
1/8 cup gluten free flour mix (Artisian worked great)
OR 1 Tablespoon corn starch


  1. Preheat oven to 350 degrees.
  2. Mix crust ingredients and press gently in greased 8 in. pan.  RESERVE 1/3 or 1/4 of mixture to crumble over the top
  3. Mix peaches, sugar, lemon juice and flour.  Pour over crust and top with reserved crumble mix.
  4. Bake at 350 until peach mixture is a little bubbly.
