Gluten-free Yeast-Free Brioche Burger Buns — Gluten-Free on a Shoestring

Ingredients: 

2 1/2 cups all-purpose gluten-free flour (I use Better Batter)
1 3/4 teaspoons xanthan gum (omit if using Better Batter)
1/2 cup confectioner’s sugar
2 teaspoons baking powder
5 tablespoons whey powder
1/4 teaspoon cream of tartar
1/2 teaspoon kosher salt
Finely grated zest of 1 medium-sized lemon (optional)
3/4 teaspoon apple cider vinegar
5 extra-large eggs (or just pick the largest of your large eggs)
1/2 cup milk (at room temperature)
12 tablespoons unsalted butter, melted and cooled
