Golden Vegetable Curry

Ingredients: 

CURRY PASTE:
2 tsp of coriander seeds
2 tsp of cumin seeds
6 cloves of garlic, peeled
1 onion, peeled and roughly chopped
2 tbsp of roughly chopped ginger
2 red chillies, tops removed and deseeded
1 tbsp of ground turmeric
2 tsp of salt
2 tsp of sugar
CURRY:
1½ tbsp of olive oil
1 large onion, peeled and roughly chopped
3 potatoes, peeled and cubed
4 carrots, peeled and roughly chopped
1½ cups of button mushrooms, trimmed and quartered
400ml tin of coconut milk
1 red capsicum, deseeded and roughly chopped
2 dozen green beans, trimmed and cut into thirds
2 cups of baby spinach leaves
