4 cups all-purpose flour

3 tablespoons granulated sugar

2 teaspoons baking powder

1 1/2 teaspoons salt

1 teaspoon baking soda

1 cup (2 sticks) cold unsalted butter

1 1/4 to 1 1/2 cups (10 to 12 fluid ounces) buttermilk

About 3/4 cup good quality preserves or jam
