2 celery ribs, diced
4 tbsp butter or vegan margarine
4 tbsp flour
1 cup milk (soy milk for a vegan version). You could use a mix of milk and broth for a less rich version of gravy
1/4 tsp salt
1/2 tsp thyme

1lb green beans (you can use yellow beans as well)
