Grilled Shrimp with Avocado Butter and Spanish Rice


Spanish rice:
2 tbsp oil
½ cup chopped onion
2 – 3 cloves garlic, minced
1¼ cups rice (use any kind you like – we use brown rice)
3 cups water
1 cup tomato sauce
¼ tsp salt
1 cup kidney beans
½ red pepper, chopped
1 tomato, chopped

Avocado Butter
3 avocados
2 cloves of garlic, minced
2 tbsp freshly squeezed lime juice
2 tbsp olive oil

Grilled Shrimp
16 jumbo shrimp, peeled & deveined
juice of 2 limes (about ¼ cup)
1 tbsp Creole seasoning
½ tsp cayenne pepper
2 tbsp olive oil
1 clove of garlic, minced
4 metal skewers
