Grilled Sweet Potatoes with Lime and Cilantro

Ingredients: 

3 sweet potatoes, unpeeled
Kosher salt
2 teaspoons finely grated lime zest
Cayenne pepper
Coconut (or other preferred) oil
1/4 cup finely chopped fresh cilantro


  1. Parcook the potatoes: Place in a pot of water and boil until fork-tender; let cool. Cut each potato into 1/4" to 1/2" slices, or divide into wedges.
  2. Preheat a grill to medium.  Mix lime zest and cilantro in a small bowl.
  3. Brush the potato wedges with the oil. Grill until golden brown on all sides (including the skin) and just cooked through, about 1 1/2 minutes per side. Transfer to a platter.
  4. Immediately season with cilantro mixture.  Sprinkle kosher salt and cayenne pepper to taste.
