GRILLED VEGETABLE TOSTADAS with FRESH GUACAMOLE

Ingredients: 

8 corn tortillas (2 tostadas for each serving)

3 T of organic taco seasoning (I like Trader Joes or Simply Organic)

1 1/2 T olive oil and more for brushing

1 small yellow pepper, seeded and cut into strips

1 small green pepper, seeded and cut into strips

1 small red onion, sliced

1 small zucchini, cut into 1/2” pieces

1 small summer squash, cut into 1/2” pieces

1 can organic refried beans, heated in a small pot on the stove

4 - 6 leaves romaine lettuce

1/2 cup salsa

Guacamole


Heat grill to medium high heat. Heat oven to 400. Lightly brush both sides of tortillas with olive oil. Place   flat in a single layer on a baking sheet, and bake for about 10-15 minutes in oven. Remove and set aside.   These should set crispy while cooling. If they don’t get crispy, return to oven for a few more minutes,   then cool.   Toss peppers, zucchini, summer squash and onion with olive oil and taco seasoning. Place in a vegetable   basket on grill and cook until golden and tender. You’ll need to toss these every few minutes. Lightly   spread a thin layer of beans onto tortilla, and top with lettuce, grilled vegetables, salsa and fresh   guacamole. Serve warm.
