Guinness Braised Wagyu Boneless Beef Short Ribs

Executive Chef Donal Crosbie redefines beef stew with this hearty recipe using succulent Wagyu Short Ribs and aromatic root vegetables that he simmers in chocolatey Guinness and red wine.


4 1/2 pounds D'Artagnan Kobe Style Boneless Wagyu Beef Short Ribs, cut across the grain (i.e., across the ribs) into 3-inch wide pieces
2 Spanish onions
2 medium carrots
1/2 head celery
2 leeks
1 head fennel, note: all vegetables should be washed and roughly diced
4 cloves garlic, minced
2 tablespoons tomato paste
3 quarts chicken stock, sodium free
2 containers D'Artagnan Veal Demi-Glace
2 bottles Guinness stout, 12 oz each
2 cups full-bodied red wine, try a bold Rhône wine, such as a Gigondas or Vacqueyras, or an Australian Shiraz from the Barossa or Hunter Valleys
1 sprig fresh rosemary
1 sprig thyme
2 bay leaves
12 black peppercorns (optional)
6 whole allspice
1 package D'Artagnan Wild and Exotic Mushroom Mix
canola or vegetable oil
whole black peppercorns
