Halibut with Coconut-Red Curry Sauce

OMG, seriously DEEEEEElicious!!! The sauce is incredible! (Note to self: make more sauce for next time.) I made quinoa instead of rice and it was really good with the addition of the bok choy and the dressing. This one is definitely a keeper!!!

Ingredients: 

2 teaspoons canola oil, divided
4 (6-ounce) halibut fillets
1 cup chopped onion
1/2 cup chopped green onions
1 tablespoon grated peeled fresh ginger
1 cup light coconut milk
1 tablespoon sugar
1 tablespoon fish sauce
3/4 teaspoon red curry paste
1/2 teaspoon ground coriander
1 tablespoon chopped fresh basil
2 teaspoons fresh lime juice
