Healthy Black Bean Brownies

1 can black beans, thoroughly rinsed
1/4 cup of coconut oil
1/2 cup + 2 tbps cocoa powder
3 tbsp instant coffee powder
1 tbsp vanilla extract
2 large eggs (replace with applesauce if needed)
2/3 cup brown sugar
1/4th cup of almond meal/whole wheat flour
1/4th cup of dark chocolate chips, melted (optional)
1/2 tsp baking powder
pinch of salt

  1. Puree black beans and coconut oil until smooth 
  2. In a bowl, add puree and mix in melted chocolate, cocoa powder, vanilla, salt, eggs (pre whisked) and sugar.
  3. Then add in the almond meal/flour, and mix until combined.
  4. Transfer into a square baking pan and bake at 350 for 20 minutes or until a toothpick comes out clean.
