Healthy Cake Batter Energy Bites


Yield: 21 energy bites


256g (1 cup) Homemade Cake Batter Nut Butter
1/2 cup Unsweetened Vanilla Almond Milk
2 tsp Vanilla Extract
heaping 1/4 tsp Salt
127g (1+1/4 cups) Quinoa Flakes
60g (1/2 cup) Quick Cooking Oats
21g (3 tbs) Coconut Flour

  1. In a stand mixer bowl fitted with a beater attachment, add the Cake Batter Nut Butter, almond milk, vanilla extract, and salt. Mix on low speed.
  2. While mixing, add the quinoa flakes, then oats, then coconut flour.
  3. Scrape down the sides of the bowl and mix again.
  4. Cover the bowl and refrigerate for 30 minutes.
  5. Line a cookie sheet with parchment paper.
  6. Use a cookie scoop to portion out the dough and place on the prepared cookie sheet.  Roll the dough into balls.
  7. Serve immediately or cover and refrigerate for later!
