Healthy Chicken Burrito Bowl Casserole

Ingredients: 

1 pound Gold'n Plump Ground Chicken
1.5 cups quick cooking white (or brown!) rice
1 cup water or chicken stock
1 15 oz. can diced tomatoes
1 15 oz can pinto beans, rinsed
1 15 oz can black beans, rinsed
2 tablespoons jalapeños, diced
1 tablespoon minced garlic
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon paprika
salt and pepper, to taste
~3/4 cup shredded cheese (I used colby jack)
Toppings: avocado, diced tomato, corn, more cheese, etc.
