Ingredients: 

1/2 cup Coconut flour
1/2 cup Blanched almond flour (or flax or sunflower seed meal)
2/3 cup Erythritol (or any sweetener of choice)
1 tbsp Gluten-free baking powder
1 tbsp Pumpkin pie spice
1/4 tsp Sea salt
4 large Eggs
3/4 cup Pumpkin puree
1/2 cup Ghee (measured solid, then melted; can sub butter or coconut oil)
1 tsp Vanilla extract
Pumpkin seeds (for topping - optional)
