Healthy refried beans

Ingredients: 

1 can (2cups) of organic pinto or black beans
1 ripe avocado, mashed
1 tomato, diced
4 tbsp of low sugar salsa
Curry powder, tarragon, & pepper to taste


In a small pot rinse & drain beans several times until liquid run clear. Cover with water & soak for 5 minutes. Rinse beans once more & cover with fresh water. Bring beans to a boil & cook until soft (5min)

Drain cooked beans & mash well in pot. Add avocado, tomato, salsa & spices. Mix well. Serve cold or heat in microwave for 2 min
