4 dried apricots
2 Tbsp. unsweetened applesauce
2 Tbsp. maple syrup
1 tsp. vanilla extract
1 cup rolled oats
¼ cup coconut flour
¼ tsp. ground cinnamon
⅛ tsp. ground cardamon
⅛ tsp. ground ginger
⅛ tsp. ground nutmeg
1 cup shredded carrots
unsweetened shredded coconut, for garnish
