Healthy Twix Bars

Cookie Layer:
1 cup almond meal or almond flour
⅛ tsp sea salt
⅛ tsp baking soda
2 tbsp maple syrup
1.5 tbsp coconut oil
1.5 tsp vanilla extract

Caramel Layer:
1 cup dates, pitted and soaked in boiling water for 10 - 20 min, then drained
2 tsp coconut oil or ghee
3 tbsp unsalted almond butter
⅛ tsp salt
1 tsp vanilla extract
+ 2 cups chocolate chips of choice (I used dark chocolate)
