2 pounds beef for stew,
1 teaspoon salt,
1/2 teaspoon ground black pepper,
1/4 cup all-purpose flour,
2 tablespoons vegetable oil,
1 1/2 cups beef broth,
4 red potatoes, cut in half,
2 onions, cut in quarters,
1 cup baby carrots,
4 cloves garlic, chopped,
2 sprigs fresh thyme or 1 teaspoon dried thyme leaves, crushed,
1 cup frozen peas, thawed
