Heerlike Pudding

2 Tbsp margarine
1 cup flour
3/4 cup sugar
pinch salt
1 large egg
1 tsp baking powder
2 Tbsp apricot jam
1 tsp bicarb
1 cup milk
1 Tbsp vinegar
1 cup milk
3/4 cup sugar
125 g margarine
1/2 cup water

  1. Cream margarine and sugar. Add egg, jam and half milk.
  2. Stir flour, salt and baking powder.
  3. Add gradually to milk mixture and mix well.
  4. Add rest of milk.
  5. Dissolve bicarb in vinegar and add to mixture.
  6. Bake at 160ºC for 45 minutes.
  7. Sauce: Boil all ingredients together and pour over pudding when it comes out oven. Allow to stand.
