Herbed Cous Cous with Peas and Pine Nuts


1-1/2 cups water
2 tbsp olive oil
1 cup dry cous cous (usually found near rice and grains, or the international aisle of the grocery store)
1/3 cup pine nuts
2 tsp fresh garlic, minced
1 shallot, minced
1 cup fresh or frozen peas (defrosted)
1 tbsp fresh mint, finely chopped
1 tbsp fresh parsley, finely chopped
kosher salt and freshly-ground pepper, to taste
