Hoisin-Glazed Pork, Bok Choy & Snap Peas

Ingredients: 

4 teaspoons vegetable oil
4 boneless pork chops (about 4 oz each), cut into 1/2-inch slices against the grain
2 tablespoons hoisin sauce
1 bunch bok choy (about 1 lb), trimmed and cut into 1-inch pieces
1/2 pound sugar snap peas, trimmed
1 cup reduced-sodium beef broth
2 tablespoons cornstarch
1 tablespoon light soy sauce
3 cups cooked jasmine rice
