Homemade Milk - Diabetic Friendly

This is a nice, sweet milk for teas and smoothies, which is low glycemic and low calorie. It's all natural, high protein, and contains no added oils, unlike grocery store milk. A better alternative to soy and pasteurized cow's milk.

Ingredients: 

2 cups of almonds, soaked, and skinned
5 cups of filtered water
1/2 teaspoon of Himalayan sea salt
1 cup of all natural coconut cream
1 T of pure vanilla extract
1/4 cup of xylitol
1/2 tsp cinnamon

You Need:
good blender
cheesecloth


  1. Blend the almonds in 2 cups water until smooth.  Divide in half and blend with another two cups of water for each half.
  2. Strain almond bits out of milk with cheesecloth
  3. Put half in blender and add half of coconut milk, half of vanilla, half of xylitol, half of cinnamon.  Blend well.
  4. Pour into container. 
  5. Put other half into blender and repeat.  
  6. Mix the two together.
  7. Optional: you can freeze this for smoothies in an ice cube tray, or freeze batches in glass mason jars without lid until frozen.  

Makes a great smoothie base, milk substitute, and beverage for kids.
