Honey-Balsamic Vinaigrette


Variations: use less honey or use a pinch of white sugar instead. Sometimes I use a little canned mandarin juice (if I'm using them on the salad), or a bit of sweet jam like raspberry or fig. I also like to add some garlic or garlic juice (a tiny splash of the juice from a jar of minced garlic does the trick).


2 tablespoons balsamic vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
1/4 cup extra-virgin olive oil
Coarse salt and ground pepper
