Hot Cross Buns



450g Bread Flour

Pinch Salt

1 tsp mixed spice

1 tsp ground ginger

1 tsp nutmeg

1/2 tsp cinnamon

100g butter (melted)

7g fast acting dried yeast

25g light brown sugar

2 eggs

225ml warm whole milk

150g raisins (I used some chopped dried apricots too for colour)

Orange zest

Apple syrup/honey to glaze
