Hot & Sour Swiss Chard

2 tbsp apple cider vinegar
2 tbsp raw organic honey
1 tbsp unsalted tomato paste
1/4 to 1/2 tsp red chile flakes (adjust to taste)
1 tsp olive oil
1 medium shallot, finely diced
1 bunch Swiss chard, sliced into 1-inch pieces, stems and leaves separated (about 2 to 3 cups stems and 4 to 6 cups leaves)
Sea salt and fresh ground black pepper, to taste
