1 x 400g can chickpeas

1 small clove garlic, chopped

2-3 teaspoons tahini (optional, if you have it)

Juice of ½ lemon

2-3 tablespoons extra-virgin olive oil

About ¼ cup ice cold water

A pinch of sumac, smoked paprika or ground cumin, to serve (optional)
