Hungarian Beef Goulash

Ingredients: 

1 tbsp canola oil
1 lb stewing beef, cut into cubes
1 large onion, chopped
3 cloves garlic finely chopped
4 potatoes, peeled, cut into cubes
2 red peppers, chopped
1 tbsp paprika
2 cups tomato sauce
1 - 1 1/2 cups beef broth
4 hard crusted round bread loaves approximately 6" diameter
Salt and pepper
Optional garnish (chives, rosemary, green onion)


Heat oil over medium-high heat in a large non-stick frying pan;  Add beef and cook until browned.  Add onion and garlic, cook until softened.  Add remaining ingredients except buns.  Bring to a boil; cover and simmer for 2 hours or until beef is tender.  Season with salt and pepper to taste.  To serve cut top off of each loaf, carefully remove interior leaving crust to form bread bowls.  Spoon goulash into each bowl, garnish with chives, rosemary, and green onion if desired
