Hurricane Bruschetta

Ingredients: 

2 large ripe fresh heirloom tomatos
4 tablespoons of good olive oil
5 cloves fresh garlic
A fistful of fresh basil
2 tablespoons of capers
1 tablespoon of balsamic vinegar
1 teaspoons sea salt
fresh ground pepper
A baguette or other nice crusty bread


Chop up tomatoes, chop up the basil, mince up 4 of the garlic cloves & combine everything but the bread.

Fry slices of bread in a dash of olive oil until crusty. Cut a garlic clove in half and smear it on the toasted bread pieces.  Add the tomato mix to the garlic bread and serve.

note: Capers are optional. You can eliminate the salt especially if you use capers in this.
